Eight Treasure Congee Recipe
Eight Treasure Congee is commonly eaten during the eighth day of the twelfth lunar month, or better known as the coldest day of the year, to celebrate the Laba Festival.
- 50 g black rice
- 50 g glutinous rice
- 30 g barley
- 30 g kidney bean
- 30 g red bean
- 30 g mung bean
- 5 Chinese dates
- 10 lotus seeds
- 15 peanuts
- 5 longan
- water, (less water for thicker congee)
- rock sugar or honey, to taste (optional)
Remove the lotus seed core and the date pit.
Soak all the ingredients in some warm water for 30 minutes.
Put all ingredients in a slow cooker, rice cooker or pot, and add water.
Leave in the slow cooker and cook for at least 2 hours until it is soft and thick.
Ready to serve! Add more water if it is not to your desired consistency.
