A new twist on your regular potato salad!
Originally a Sichuan dish, hot and sour shredded potatoes are a favourite among many regions all over China. Potatoes are China’s largest crop so it’s to no surprise that this dish is also one of the most well-known home-style dishes.
Hot and sour shredded potato is made by cooking the potatoes at a super high temperature in oil that is infused with chilli peppers. This adds the spice and a smoky flavour to the dish.
